Raw tasty treats are all the rage at the moment and I have sampled a few different things recently and every time I find something that is particularly delicious I like to attempt to make it myself at home. Just this week I tasted a raw lemon slice that was just divine!
So of course, I then went home and scoured the interwebs for something that resembled what I had just eaten. Not finding exactly what I was looking for, I decided to just do a bit of trial and error and I have come away with a winner! So of course now I will share this recipe of scrumptiousness with you…
Raw Lemon Slice
15 medjool dates pitted
5 dried figs
1½ cups mixed raw nuts (I used hazelnuts, almonds, cashews and walnuts)
2 Tbsp. coconut oil melted
2 cups desiccated coconut
2 lemons zested and juiced
½ an avocado
3 Tbsp. pure maple syrup
Place dates and figs into a bowl and cover with boiling water, soak for 10 minutes.
Place nuts into food processor and blitz until they are roughly chopped.
Strain soaked dates and figs and add to processor with coconut oil. Blitz until the mixture comes together as a sort of dough.
Press mixture into a slice tin lined with clingwrap, place into freezer whilst preparing the topping.
Place coconut into blender jug, blitz until the coconut becomes a creamy consistency (this can take a few minutes)
Add the lemon zest and juice, avocado and maple syrup and blitz until combined. Now if you taste the mixture at this point you will notice it is rather sour, don’t add more syrup! It balances out the sweetness of the base and gives it the zing it needs.
Spread the lemon mixture over the base and return to the freezer for 2-3 hours until set.
Once set cut into squares and either store in the fridge or, if you’re like me, in the freezer so you won’t be tempted to just keep eating it!
